Amy Haines, Out of the Fire proprietor and founder, announced that Thursday, September 15 th is the official opening of the restaurant at its new location at 111 South Washington Street. The announcement was made at a ribbon cutting ceremony on Wednesday attended by Easton Mayor Robert Willey and his wife Betsy.
Commenting on the opening Haines said, “I have to thank the entire Out of the Fire team for all of their hard work getting this new location ready. We are all very excited to begin serving the community once again. She added, “I also want to thank Mayor Willey for cutting the ribbon and making it official.”
Out of the Fire recently moved from its Goldsborough Street location where it resided for 22 years building a large and loyal following with its casual, farm to table dining experience. The new location on South Washington Street will feature smaller, more intimate dining areas, outdoor seating, a private dining area for special gatherings, a 900 square foot kitchen with a vaulted ceiling, among other amenities.

It is a sign of how much Amy and the OOTF gang matter that a large number of area residents/devotees have had to seek out counseling for the admittedly-brief closing period required to make the move. There was talk of near-death experiences during the closure as well as suggestions that we should dress in mourning. Eureka! OOTF is back and life can be resumed.

Bravo Amy and crew! What a day for you!
I had the pleasure of meeting Amy at a yoga class over 22 years ago when she had just moved to town from California. She started talking about all this fancy stuff like a wood-fired pizza oven and opening a restaurant when her only experience in the food industry was as a customer. I remember thinking to myself “this ought to be interesting” yet happily accepted her invitation to have a meal during a trial run and learn more about what she was talking about.
Here we are over 22 years later and I’m the fool.
Amy and her loyal team have knocked her restaurant vision out of the park and then some. Not only does she serve great food, Amy really cares about her contribution to our community. I mean really cares. She cares about what we eat and takes pride in serving healthy food and nurturing our community through mind, body and spirit.
Not to mention that Amy is kind, spunky, bright and has a terrific sense of humor. She’s not afraid of adventure or trying something new. She knows many of her guests personally and knows what they’ll like for dinner. Many famous people have dined in her restaurant where she honors their privacy with respect and space.
What many don’t know or don’t see is she also cares about her loyal, seasoned staff on a personal level. Many have been with her for a long time. Unselfish and not doing this for personal glory, she treats them well and nurtures her restaurant family and they in turn offer her their best. One gets the feeling there are a lot of good things she does and supports without anyone knowing.
Amy is an important thread in the tapestry of our community and a model of what it means to give to others. She is a doer, not a talker. She delights in supporting neighboring businesses and is usually the first to welcome new ones to town, especially fellow restaurants. She knows a healthy community is one where all grow and thrive.
She is an important asset to Easton, bravely blazing new trails. All ignited by the fire that burns so passionately within her. Indeed, Out of the Fire is an appropriate name for her business. Her creativity and boundless energy come from out of the fire burning deep in her soul. Saving the environment, acting globally, being nice to animals, supporting local farms, eating well and uplifting the arts are among her many passions.
It’s hard to capture all the good Amy does for our community. She is an upstanding citizen ignited by her fire’s flickering flames and clearly we need more Amy’s in the world. We can’t wait to see what Version 2.0 is all about.
