Food Trucks Reconsidered: The Easton Town Council Wants More of Them

August 20, 2025 by The Spy

Share

For years, Easton hasn’t exactly rolled out the welcome mat for food trucks. The rules were written back when trucks were seen as out of place in a town like ours—and when brick-and-mortar restaurants wanted protection from losing customers. The Council responded with regulations that kept food trucks on a very short leash inside town limits.

Now, as Councilmember Robert Radkin told the Talbot Spy in a short conversation today, that mindset is shifting. The Council is rethinking its stance and preparing a pilot program aimed at opening up more spots in town for food trucks to operate.

This video is approximately seven minutes in length.

I can only speak for myself, but food truck vs sit down restaurant is not a one or the other decision. I am either looking for a fast grab while moving between point A and point B or I am looking to sit down and enjoy a meal.

Why would someone want to encourage the presence of food trucks in Easton?

      Mr. Hopkins,
Off the top of my head I would mention convenience for hourly workers, diverse menu options, not having spend two thirds of one’s lunch hour on route 50, opportunities for entrepreneurs, and recognizing that disruptive innovation isn’t a.bad thing.

I agree. Bring them on! Opportunities for entrepreneurs, convenience, diverse menus are all benefits.

All in all, a good argument for food trucks! I look forward to seeing what additional culinary choices this will bring to our town.

What better way to slap restaurants in the face than by fragmenting their income further. What incentive do they hace to invest in a dine-in establishment, when they can get a dingy truck and sell greasy slop on a street corner? There seems to be precedent, however. Rise Up figured out how to dupe the town by promising a building, then putting up a hobo tent and trailer homes instead on Dover. I guess driftwood restaurants are the new Easton now.
