Olivins Fine Olive Oils and Vinegars of St. Michaels, Md. Owner and Operator Bill Acosta, right, recently presented a donation to Chesapeake Bay Maritime Museum President Kristen Greenaway, left, in support of CBMM’s Annual Fund. The donation comes from the sale of Olivins’ Rosie Parks Balsamic Vinegar—a reserve cast of balsamic vinegar aged aboard its namesake, CBMM’s 1955 skipjack, Rosie Parks. Barrels of the vinegar were placed on the skipjack last June and removed in November, with the motion of the dockside skipjack accelerating the aging process. Limited, six-ounce bottles of the vinegar are available at CBMM’s store, with Olivins releasing a longer-aged batch of the vinegar on Black Friday.
