We love fresh-baked muffins! Corn muffins, blueberry muffins, muffins for breakfast, muffins for lunch, muffins anytime!
I wish I had had this recipe back in the day when I was still taller than the Tall One, and the Pouting Pescatarian was more agreeable. This handy muffin would have given their pedestrian lunch boxes a little more pizazz and panache. Still, they do swoop in for weekend visits, so having a little stash in the freezer is probably wise and grown up of me.

Too often I get lazy and pick up store-bought corn muffins. I really should be ashamed of myself. They are a waste of good money and oh, my heavens, the calories! Good muffins are worth the exertion to master a delightful smackeral that isn’t loaded with high fructose or preservatives or an unwieldy price tag. Hot melted butter does not drip down your chin eating a store-bought muffin. Home baked muffins sitting on the counter mean we are prepared and organized! And it is always fun to line muffin tins with the little ruffled paper cups – so festive! This was a more labor intensive recipe, and thanks to The Bitten Word for some of their warnings. But it would be pretty yummy to have carrot cake-y muffins for a change.

Now the Orange Scented muffins could evoke a full breakfast – almost as evocative as if Mrs. Patmore had thoughtfully fried up some bacon, and Mr. Branson ironed the newspaper whilst Mr. Carson handed a portentous telegram to Lady Mary at the breakfast table. Realistic? Hardly. But we thrive on whimsy!
The next recipe just sounds like so much cheating – Blueberry Oatmeal Muffins with Flaxseed? Really? Seriously? My children, who did not benefit by growing up in proximity Williamsburg hipsters, would never have fallen for these sneaky birdseed cakes in a million years. Apparently you can adapt this recipe depending on what fruit is available. You can get your children to hate you through every season. In the end, we always find that simple is best. It is perfect.
